Our Story
Coffee seeds are used to produce roasted coffee beans, but the sweeter coffee fruits are often discarded as waste after the seeds are separated. This uncomposted green waste often ends up in rivers and creeks, polluting fresh water, harming aquatic life, and making water inaccessible for Indigenous and downstream communities.
To tackle this issue, Praveen Ponraj, founder of Climate Wave Coffee, set out to give coffee fruits a new purpose and value. After collaborating with kombucha experts, Cascara Kombucha was born in 2022. Since then, Praveen has been test marketing and searching for production partners who share Climate Wave Coffee’s values.
Fast forward to 2025 — fellow ecopreneur Andy Cunningham, founder of Green Cuisine, generously offered to become our production partner. And just like that, Shady Booch was born!
We craft our booch in small batches right here in Downtown Victoria, BC. Our kombucha doesn’t just taste great — it’s also the first in Canada to help fight water pollution and deforestation.
